I wouldn't say the biggest fan but he is great in what I have seen of him.

Kumonosu-jo, Yojimbo, The Sword of Doom, Seven Samurai

Went backward into them, grew up watching the Magnificent Seven and when I got a bit older and into film a bit, I went in search of Seven Samurai and found some of his other stuff, but that is a far as I got.

The opening sequence to Apocalypse Now with The End playing over the napalming of a treeline is a bit good.

Manhunter soundtrack works well.

Ry Cooder's Southern Comfort is a good shout by Cheese too.

Re: Favourite song intro and film score
For a REAL orchestral score (rather than falling back on pop songs) you'd be hard-pressed to top the score for "An Unmarried Woman", 1978. Paul Mazursky (d) Bill Conti (m)
